This changes the majority of the answers in the thread, FYI.
The best Mexican food answers that people are giving are more like Mexican grocery stores, counter service, etc.. which are delicious, but not what it sounds like you're looking for.
If you're talking the big loud Mexican places with more of a party atmosphere and margaritas flowing, a place like La Tiendita or El Rio Grande isn't really where you want to go

Zapata's by Lowes on Siegan. Best bean dip I've had, good home made salsa and some of the best plates of mexican food I've had in a long time. They used to own the little authentic spot on Jones Creek and moved to this new location.

El Rio Grande gets my vote. Love the chili/cheese/onion enchiladas con huevos, and those chocolate peanut chimichangas are awesome

Is Carlos' at Airline and Florida Blvd. closed? Loved this place. Father of the brothers who opened Mestizo's.

No it's still open -- he closed it for several years but then reopened it
