my list is from using dehydrator...i've never tried in smoker.

All are good suggestions. Smoke it for an hour then finish it off in a dehydrator

We did eye of round once and it was good. Make sure to marinate for at least 24 hours, and watch it. The sizes are usually inconsistent and can easily get overdone.

The leaner the cut the longer it will stay fresh
