Do you debone the chicken, or just throw the entire pieces in? What effect does the fried crust have to texture of the gumbo?

Yeah I debone the chicken. Then toss it all in . The fried crust is the best part. An old friend for 40 years has made it and I started a long time ago doing it.

He would buy the cold day old fried chicken from Albertsons. Make is base with sausage and then just debone and toss it in. Like using a rotisserie but man it is a good one. We’ve talked about it a lot on here over the years. I got Gris Gris making it years ago as well. RIP.

I believe an 8 piece spicy might make an interesting chicken salad. Certainly one worthy of a prototype for testing purposes.

Fried chicken makes great chicken salad. I always add some diced up skin for crunch and flavor.

If it’s a big batch that’ll sit in the fridge the skin will get soggy, so save some, heat it crispy, and mix it in when you’re ready.

I’m sure Calvin’s will get lots of love, but who else you got?

Not sure if we just got a bad batch, but I tried Calvin's for the first time yesterday and thought it was pretty unappetizing. I'd take any of Chicken Salad Chick's offerings over that.

Nice. I’m going to try it.

Skin does the same in the fried chicken gumbo. But the crumblies. My lord.

Half Olivia's Old South and half Dixie Chick, is better than any grocery store chicken salad I've had

I went with Oakpoint and I agree with this statement. Not far behind Calvin’s though.

Chicken salad is just a clever way for a supermarket to get rid of chicken that is starting to go south.

This is completely BS. Chicken on the verge of going sour would not be masked by turning into chicken salad. That’s the dumbest thing I’ve heard in a while

Sour or nearing its expiration date? Big difference.
