Planning a brunch with friends tomorrow. Love drinking these but never made them myself. What champagne do you recommend be used with it?

Something less than $10 per bottle. Freixenet cava is decent for the price.

I would recommend any mid-range priced, dry or "Brut" champagne. You don't want to use a sweet champagne in a Mimosa and an higher end champagne is wasted mixed with orange juice.

I like La Marca Prosecco. I've also had a few wiht Costco's Kirkland Proseco. At $6.99 a bottle it is above average for Mimosas.

Anything cheap. Don't waste good Champagne on mimmosas. Spanish cava in $12.00 range is good.

Everybody´s talking about using Cava. Careful, bubbles are larger and much more sparse (Champagne´s are small and very, very numerous).
It´s also sweeter and not as crisp as Champagne.
That said, if people are going to use Cava in a Mimosa vein, I´d make Sangría de Cava.

This grab a case of it or Cristalino. I think Cristalino is a bit cheaper than Freixenet.
