I haven't had much catfish in Texas, but I do like Captain Tom's in Houston. Their michelada is top notch as well

To be honest, as long as catfish is filleted properly to get as much of the grey belly stuff off as possible, it’s pretty damn hard to screw it up.
Someone earlier in the thread ask if people really go out to restaurants for fried catfish, and for me, restaurants are about the only place I eat it these days. My freezer will have specks, bream, bass, sac a lait, redfish, and other coastal fish at given times, but I never fish for catfish.

Just because it’s in Louisiana doesn’t make it magically better, there ain’t nothing the cooks there know that nobody in tx does. In fact, the fact that there is much more competition in tx means that to stay in biz means there is a high likelihood it is better than the avg. Louisiana fish place.

Yep - never seen it done that way before, but it's good. Only bad part is it has bones. You can also get the regular fillets
