My mom was from Welsh, and it had to be over rice. Beef, onions, carrots, potatoes, water, salt, pepper and flour to thicken. Never any peas, green bell pepper or celery, and always over rice.

For me a good beef stew stands on it's own...It's a one pot meal...maybe cornbread or french bread or a warm pistolette for sopping.

I'd leave out potatoes and serve over rice.

Either this, or add potatoes and no rice. Never both, although doubling up on starches is a South Louisiana tradition.

I add a little red wine to tenderize the meat, and some fresh thyme. It's also good over pappardelle noodles.

We always use potatoes in stew. Rice (or mashed potatoes) and stew seems so weird to me. Noodles I associate with stroganoff.

Noodles are suggested as a starch with Julia Child's Beef Bourguignon. They're also good with meat or vegetable ragu.
