Beef Ribs, anyone else get a hankering after watching the game?

I ended up missing most of the 1st 1/2 of the game searching for ribs after seeing the clip where they were putting the plate ribs on the smoker. I wasn't able to locate any 123A on that short of notice, but found some nice 130 chuck short ribs from Alexander's on Highland.



4hrs on the offset then finished on the Kamado. Anyone else do ribs over the last couple days?

Beef ribs are one of my favorites, but man have they become expensive. Those brisket, chicken wings, oxtail and turkey necks use to be way cheap. Now they beef ribs and oxtails cost more than Chuck roast.

Those look awesome. Love a beef rib.

Why switch from offset to Kamado? Just for ease of temp regulation without having to babysit firebox?

Just went to the Country Meat Market in town and got some dino bones. Looking forward to smoking them. Those look amazing

What's 123A vs 130 ribs?

123A "Plate" ribs are the traditional beef ribs used in Texas BBQ. 130 are a little cheaper and easier to find because most groceries cut them in quarters and sell them as short ribs, they will typically have the 4 bone racks in the back if you ask.

Thanks for the info. Just starting to get into beef ribs after working on my brisket skills.
