Many years ago when working at a steakhouse, I made a great one with tenderloin trimmings. Lose the bacon and carrots and add a really rich beef stock and its pretty close.

Add a little sour cream to left overs and toss with bowtie/penne/rotini for beef stroganoff

Ina Garten's recipe is ridiculously good...plus you get to set your pan on fire! Definitely worth checking out for a nice cool weather meal.

You got me reading up on beef bourguignon recipes. I've made one a couple times before but used egg noodles instead of mashed potatoes. It was incredible.

But anyway, reading up on the Julia Child recipe and cafe delites edits in this Link.

quote:

We tried this with a few cuts of beef: brisket, chuck steak and stewing beef (yes, the third time I made it was in our Instant Pot/Multi Cooker). Brisket yielded our favourite result.

The meat fell apart so beautifully and tasted better than the others with a juicy outcome. Having said the though, you can use whichever stewing beef you can find or have on hand.

Got me thinking. What if i smoked a brisket on Saturday, and used the leftovers for the bouguignon on Sunday? I know i miss the goodness of the fat from the brisket cooking in its own juices in the stew, but i do add some smoke flavor.

Hmmm....
