BBQ Cookoff ideas

Looking for some ideas for a BBQ cookoff. Thought about something with smoked pork belly burnt ends, but looking for something that would wow the judges.

The year before bought a brisket from Cobos bbq in humble and entered it as my own and won 1st place.

baby back ribs and mix jack millers with sweet baby rays for the base. auto winner.
