BBQ brussel sprouts

We were in Houston in October and stopped for lunch at Truth BBQ before flying out. Their brussel sprouts were the best the wife or I either one have tasted.

Does anyone know what they do to them or have a copycat recipe? My guess is they cook them either in tallow rendered from the brisket trimmings or from the brisket drippings.

I've found Leonard Botello's recipes for the tater tot casserole and corn pudding online, but nowhere can I find any hint of what they do for the brussel sprouts.

Really? No. 3 in all of Texas according to the Texas Monthly Top 50. Exceptional BBQ.

I regrettably didn't try their brussels the last time I went but a honey/balsamic profile is really good. I'd half them, toss them in an oil (avocado, olive, brisket tallow(!) ), season with SPG and lay them out on a sheet tray. Throw them in the smoker until crisp tender, remove and toss in the honey/balsamic sauce then under a broiler to crisp the edges.

Have you heard of TX BBQ?

FTR, Brussel sprouts at Killens BBQ are very good as well.

Honey balsamic sounds good. Something I read yesterday said Truth uses a honey Sriracha glaze.

I haven’t been south of I -10 in Houston in decades and I don’t subscribe to Texa Monthly.

Then you’d be happy to know that the original Truth BBQ is north of I-10. It’s even north of 290.

That texas bbq is about heavy smoke, salt, and pepper on beef.

And any addition is the result of cultures who appreciate food that isn't bland garbage adding things to it.

It’s funny how someone 4 states away is expected to know if some random 2 location BBq restaurant in a state with many many great ones.

I only wanted to know about the sprouts. Haha!

I’m familiar with Brenham. Just don’t go there.

Blue Bell is the most overrated ice cream in the world.
