Not sure if I'd be considered Prarie or Bayou, all of fanily from Iberia parish.

We put eggs in stews, sometimes gumbo. Always eat stews with potato salad, you choose if you want to combine it.
I'd say all are true for my family. We eat a lot of crawfish, but we eat more shrimp. Oyster is my favorite, but the family doesn't use them as much as crawfish/shrimp outside a seafood gumbo.

...guessing I'd be moreso a Prarie Cajun.

never had chicken/sausage gumbo WITHOUT homemade tater salad and garlic bread...gimme some homemade rootbeer and i'm in heaven

I'm not Cajun at all. My father's family is New Orleans German, my mother grew up in Welsh, but her parents came in with the wave of mid-westerners that came in not sure when. They were just surrounded by prairie Cajuns.

Oh, I don't go for that.

But Poche was the perfect source for the info that I needed to complete the Jambalaya Calculator. I knew how I wanted to set it up, but Poche provided the actual knowledge on how to make it.
