Banana Wine Recipe

Slice bananas into thin discs, leaving skins on fruit. Put into grain-bag, tie top, and place in 6 pints water. Bring to boil, reduce heat, and simmer for 30 minutes. Remove grain-bag to bowl to catch drippings while pouring liquor over sugar in primary fermentation vessel and stirring well to dissolve sugar. Add acid blend, pectic enzyme and tannin, stirring again. When grain-bag cools, squeeze to extract as much liquid as possible and add liquid and drippings to liquor, discarding pulp. When liquor cools to 70 degrees fahrenheit, add yeast and nutrient. Cover and set in warm place for seven days, stirring daily. Pour into secondary fermentation vessel, fit airlock, and move to cooler place, leaving undisturbed for two months. Siphon off sediment, add chopped raisins, and add water to bring to one gallon. Ferment another four months. Rack and allow to clear. Rack again and bottle. May taste after six months, but matures at two years. I'd try it. Though I haven't done much lately, I like trying to make booze out assorted things. Thus far I've made beer, mead, rice wine, berry wine and Satsuma wine.

Id imagine this would be sweet and Esther-y. Probably a dessert sipper. I like bananas though, and they're cheap, so it's probably inexpensive to try to make. I'm planning on going to my uncles place to pick a bunch of Satsumas and retry making wine out of some of them again soon but maybe when my 3gal carboy is empty again this could be my next experiment.

Don't know about Banana Wine, but I've always wanted to make some banana vinegar for traditional Costa Rican chilero.

I make an apple wine using unpasteurized apple juice and corn sugar. Stuff tastes like a liquid Jolly Rancher and will absolutely destroy you. Called it liquid panty remover.

Herters Book

I found it at a garage sale and it got me interested in wine making.
