Pinot Noir, Beaujolais, or Cote du Rhone. You need a light to medium bodied red, not too tannic or heavy. Something to stand up to the heavy food but not overwhelm it.

So cured pork, potatoes, cheese?

A south american or Spanish red.

That's the nectar of the gods in yellow, purple, green, and red you got there, brother. Goes with almost anything and gives you memories you might never forget. Real chase cars, piss on a bush, and howl at the moon experience.

However, the OP might want to consider going with a nice chardonnay.
