He's on some crusade to inform everyone who doesn't use nitrites that they're doing it wrong.

He audited a food science course & now thinks he's an authority on cured meats.

I’m simply telling you facts and you choose not to accept them. Nothing more. I’m shocked you teach culinary arts and don’t accept the truth. Perhaps you should audit a meat science or food science class? In fact, culinary science is part of food science, it’s not an art class. Seriously, open your mind and learn the facts. Cook the way you want to, but you can’t argue facts.
