Avocado & Cucumber Chilled Soup

Made this tonight, it's amazing. I just upped the jalapeño and salt/pepper a little. Plus I quadrupled the recipe and added one more Avocado (5 avocados and 4 cucumbers)

Your soup sounds nice, especially if it ever gets warm again.

I have had a similar soup to your post at Mr. B's - quite a few years back. It did not have the cucumbers of your soup and I don't think it is on their regular menu.

Here is their recipe for chilled Avocado Soup. Someone here (I am sorry - I can't remember who) found it in one of their Mr. B's cook books and gave it to me via a TD post quite a while back.

Cold Avocado Soup – From Mr. B’s Bistro - NOLA

1 medium russet potato, peeled and cut into 1/2-inch slices
1/4 of a bay leaf
kosher salt and freshly ground black pepper to taste
3 avocados
1 1/2 cups cold milk
1 1/2 cups cold heavy cream
hot sauce to taste
1 pound jumbo lump crabmeat

In a medium saucepan combine 1 1/2 cups water with potato, bay leaf, salt and pepper and cook until soft. Remove bay leaf and chill. Puree in food processor to a nice smooth consistency.

Peel and pit avocados. In a food processor combine 2 1/2 avocados, 1/2 cup potato puree (discard leftover puree), milk and cream. Season with salt and pepper to taste. Dice remaining avocado and use as garnish when plating.

Serve in a shallow soup bowl with a nice spoon of Lump crabmeat and a shot of hot sauce.

Saved it. Sounds great for a Friday in the spring with some wings on the grill and LSU baseball on TV.

Might use cucumber instead of crab meat from your recipe.
