I was always amazed at the hours BBQ purveyors are willing to put into their craft.

IMO - if the pitmaster is not putting in a bunch of time with the product, it shows right away.

How many hours did you work (average)? Did you mind the smoker, or someone else? How much attention did it require?

7 Years at 125 hrs a week average. Just me and Mrs. Chef manning the pit. Checked on it every 30 min while smoking. I must have been INSANE or very passionate. Was hard being away from the family so I hired them to see them more lol

Is there a better strip club than ricks cabaret on bourbon? I feel like there has to be something nicer outside of the French quarter. Don’t get me wrong I like ricks but just think there may be better options.

Little light for my taste, I like a darker roux. I accept the challenge tho, a brother is kinda hungry talking about all of this food!
