The best fried chicken I've ever had was from the Family Mart in Kichijoji Japan.
I will admit I was hammered on Suntory whiskey.

If in NYC, hit Turntable Chicken Jazz. Korean fried chicken, with cool jazz playing. Very good.

That isn’t chicken. It’s saltwater catfish cheeks. Coated, deep fried in old eggroll and Gen Sao grease. Seen it cooked.

They velvet their meat before frying and they use cornstarch in the breading. Both are gamechangers. Velveting doesn't make a huge difference with chicken, but for beef and pork (and likely venison but I've never tried) it will make those proteins melt in your mouth.
