Anytime I've ever bought them they tasted like fishy ditchwater crap.

Rinse the fat off when you thaw them. It will eliminate that possibility. And yes, I know that the fat gives a lot of flavor. I'm the guy who makes everyone save their crawfish fat if they peel it off at a boil so I can eat it.
