Are the ribs ruined?

Ribs have been on the smoker about 3 hours. Wife is power washing and tripped the breaker. Last check they were 161, now they’re hovering around 100.

It’s 2 small racks, but they’re local pork, so they weren’t cheap. Are they salvageable?

No. Bring them back up to temp and keep on cooking. May come out really tender, but still ok

I hate messing around with food like this. I wouldn’t, but I’m pretty soft when it comes to this type of stuff.

They came back up to temp pretty quickly. I put them in the oven to finish, and they’re back at 185, so I think they’ll be ok.

I think my thermometer was reading the inside of the smoker, not the ribs- they’re small racks, so it’s hard to get it in the meat, not touching bone, but not stabbed through the meat.

You're fine. 185 is killing anything that came around, but likely you were fine anyway. Think about how unclean the average person is, and food poisoning isn't even top 30 in causes of death.

Update- they were delicious! Maybe the best ribs I’ve ever cooked. Kids and I polished them off quickly

Power went off and smoker temp went down?
