Anyone use sous vide to reheat meat?

If you have left over steak from a nice restaurant and don't want it to be over cooked during the reheat process can your just use a sous vide? How does it turn out?

yes. it works well.

i do it for anything i dont want to dry out. works good for left over vacuum sealed jambalaya too

I slice it thin and sear it in a hot skillet with butter. Then I make eggs in that skillet.

It would work, but seems like a long time to wait for reheating leftover steak when an oven is more likely quicker. I usually just heat up the cast iron, throw some butter and do a light seer on each side. It may not be fully warm all the way through, but I'm fine with that.

Even it if were quicker, it will still dry things out because of the air contact and the temperature, both of which the sous vide approach eliminates.

That said, I've used it a couple of times to reheat stuff like a steak or baked/poached fish and, while it was great at reheating without drying out, the quality still wasn't anywhere near what it was freshly cooked and I wished I'd just incorporated the meat into another dish instead of simply reheating it.

Have done it with leftover vacuum sealed brisket and leftover vacuum sealed pulled pork and it works great. Keeps it very moist.

FWIW, I don’t reheat steak that was SV’d. Just leave it on the counter while I make coffee and let it get to room temp.

lower the temp when cooking that egg and you have yourself a killer breakfast. That is unless you like the crispy ends. Some do.
