The courtbullion is a miss. He says cook the fish, shrimp for entirely too long. Like over an hour. They are neat books though. Some of the recipes are good and as mentioned he really gets into the history of food, LA and whatnot.

Both are very much winning. I'd say though, if you were wanting a very authentic regional book with awesome history behind it all, Besh's book is without a doubt the best I've ever read. You will come away more informed of stuff you may not have realized and also given the tools to pull it off as spot on as I think is done. He spent a long time researching all that stuff. I can't see anyone with roots here who wouldn't be engrossed in all the wealth of information in it.

I think his books and recipes are top notch.I worked for 5+ years. The guy can be an arse but I really respect what he does with the books. They are very will done. He has a great crew that puts them together.
