I bought some shrimp earlier and want to use the shells to make a stock for the gumbo I'm making for NYE. I was planning to put some veggies, shrimp heads/shells, and 4 qts of water (6 qt instant pot) in there. I'm not sure on the pressure/time since I just got it for Christmas (I should probably open it, lol).

I have not, but the Instant Pot site says you can make Seafood soup or stock by cooking under pressure 6 – 7
minutes (fresh ingredients) or 7 – 9 (frozen). LINK
A blogger from Ohio who is a pretty good cook and big Instant Pot fan says to make shrimp stock put in shells, onion, etc. and a quart of water then: "cook at high pressure for 10 minutes, then let the pressure come down naturally, about 20 minutes. (If you’re in a hurry, pressure cook on high for 15 minutes, then quick release the pressure.) ...Strain the stock through a fine mesh strainer, and set it aside." LINK

Sounds quite appetizing!

It doesn't take but 30 minutes tops to make a shrimp stock in a regular pot.
