Anyone make their own olive salad for muffulettas?

OLIVE MIX FOR ITALIAN SANDWICHES

1 cup chopped pickled garden relish (giardiniera)
2 tbsp olive juice
1 cup chopped Kalamata olives
1 1/2 cup chopped green Spanish olives
1/2 cup diced onion
8 cloves diced garlic
1 tsp dried oregano
1 tsp dried basil
1 tsp celery seed
3/4 cup extra virgin olive oil
1/2 cup red wine vinegar
Black pepper
Can add capers

Man, that seems like a lot of work for something so readily available and good. But to each his own.

I’ve done it and didn’t really use a recipe. I was living in Miami and craving muffulettas.

These were my exact thoughts.

I just buy Central Groceries because if I tried to make I would attempt to duplicate it exactly.

20 Ounces Olives - Sliced Salad - , 10 Oz Jars
4 1/4 Ounces Olives - Chopped Black - , 4.25 Oz Cans
1 Cup celery, Chopped Fine (About 3 Stalks)
1/2 Cup Cauliflower, Chopped Fine
1/2 Cup Fresh parsley, Chopped Fine
1/3 Cup PEPPERONCINI pepper, Or Banana pepper
1/4 Cup Carrot, Chopped Fine
1/4 Cup Cocktail onion, Red Onion
3 Cloves Garlic, Minced Fine
2 Tablespoons Capers, Chopped Fine
1 Teaspoon Dried oregano
1/4 teaspoon Freshly ground black pepper
1/4 Cup Extra Virgin Olive oil
3 Tablespoons Red Wine Vinegar, Or BALSAMIC VINEGAR
Optional
CELERY SEED
Basil
Thyme




Mix all except oil.
Fill jars with mix and top off with the olive oil.


I make my own because I use ingredients I like and can control the oil so it does not saturate the bread in sandwiches.


Have not made it in a long time.

Oh hell. just buy it!!!

I make a quick one just to satisfy my muff cravings. Olive oil, garlic, green and black olives, oregano, lil salt and pepper. I don't know the measurements, just eyeball it. Blend.
