Anyone have a homemade pasta in butter sauce recipe?

Just got a pasta maker and plan on trying to replicate the homemade pasta in butter with green onions dish they used to serve at Tony Angelos. Somehow the restaurant got the pasta itself to taste like butter. I don't think its as simple as cooking the pasta then adding butter but I could be wrong. Anyone on this board ever make a similar dish and care to share the recipe?

Yes, it’s as simple as adding the freshly cooked pasta to the butter sauce and gently heating it in the pan with the sauce.

Re: fresh pasta, I’ve found the food processor does the best job mixing/kneading. By hand is a fast track to arthritis.

Reserve some of the starchy pasta water to add to the pot/pan of sauce when you add the pasta. Cook the pasta in as little water as possible (salted) to concentrate the starches.

Going to probably need to melt buttter and then add the water like other poster said , stirring it in until it emulsified. You might need some parmesan cheese to thicken it a little as well. Will be like authentic Alfredo.

Make tajarin pasta. Very light northern Italian pasta that goes perfectly with a butter sage sauce. It’s all 00 flour and egg yolks. Fantastic pasta.

I'm curious how you'll like fresh pasta as opposed to dried. Make sure to report back on how it came out.

Look up some videos on Cacio e Pepe. That will show you how to make the sauce. Then modify to decrease/eliminate the pepper and add the green onions. Of course, having never had the dish you are talking about, I am just making a wild assumption.

But first, make Cacio e Pepe. It is great.

BTW Cacio e Pepe is only 3 ingredients...pepper, cheese, and pasta. The sauce does not include butter or cream. The starchy water and cheese make the creamy sauce.
