I got the idea from watching Good Eats. I'm making steak and chicken fajitas, and I've got a half inch piece of flank steak. I'm thinking about 1:30 on each side should do I(I'm just gonna cook the chicken normally). Does anyone have any experience with this? Is there something else I should keep in mind.

Do you mean like the meat touching the charcoal? or just cooking over direct heat?

You basically lay a thin piece of meat directly on the charcoal. Alton Brown showed me, I swear.

I'd say you are prolly about 99.873% correct, unless by accident.

I've never done it. Seems like it would burn to a crisp and taste like beef jerky coated in charcoal. I've cooked stuff wrapped in foil on top coals but not bare.

I'm always looking to try new stuff out. It's not a high dollar piece of meat to begin with.

I did it recently on accident, but it was pecan wood and not charcoal. I was cooking some chicken breast on skewers over a camp fire. I had my bricks set too low and when I placed my chicken over the fire they sat right on the coals. Said "screw it" and left them there.

Best chicken I've ever cooked.

So I'm NOT crazy. I'm gonna try it with my chicken breast too. I've got them butterflied so it shouldn't take long.
