Anyone cook with morels? Tips? Recipes?

So apparently I was drinking and amazoning one night and ordered a couple ounces of morel mushrooms.
They weren’t cheap so I don’t want to use them like regular mushrooms.
So what do you think? Could these be good in a meat pie?
Thinking of making a brisket and ale meat pie for a game of thrones watch party. Might be a nice addition and worth the splurge.
Anyone use these before?

Meat pies are great. I handmake my crust. Might have to do the brisket in the oven since my smoker is out of commission

Brisket and Pale Ale Pie
Ingredients
2-3 tbsp Oil
1 Yellow Onion (diced)
2 Carrots, (diced)
3 Celery Sticks (diced)
3 tbsp Flour
2 cups Beef Stock
1 cup Pale Ale
3 tbsp Fave BBQ Sauce
1 tbsp Fave BBQ Rub
Leftover Brisket (diced)
1 cup Frozen Peas
Short Crust Pastry (1-2 sheets)
Puff Pastry (1-2 sheets)
1 Egg White (whisked)
Steps
1. Preheat oven (or smoker) 400f (204c)
2. Heat oil in pan then sauté onion, carrot and celery til slightly softened on medium heat
3. Add beef stock, BBQ Sauce, BBQ Rub and pale ale and let simmer on low heat for 5 minutes
4. Stir through diced leftover brisket
5. Gradually add flour to thicken filling to your liking (or more stock or pale ale if needed)
6. Once pie filling has desired consistency remove from heat
7. Press short crust pastry into pie tin
8. Place pie weights (or dry rice) into pastry shell and blind bake until the crust pastry begins to turn golden brown then remove from oven/smoker
9. Stir through peas into pie filling (they may turn mushy if added earlier)
10. Remove pie weights and add warm pie filling to tin
11. Place puff pastry sheet over pie filling making sure all edges are covered (pinching around the tin rim)
12. Brush to top crust with the egg wash
13. Return to oven/smoker until puff pastry turns golden brown .

Similar to that but not that one. The picture I grabbed, but I could show you some game of thrones themed pies i’ve Made it if could figure out how to post pics from my phone again.

Mix them all together well until your crust is the right consistency, you want something near noodles.
Then you line your greased pan and blanch your crust. 10-15 at 375, IIRC
far as the filling goes, I like savory meats, hearty veggies, i’ve Even added blackberries. Turnips go great. You want a really thick gravy, Almost a gel. Once you get your flavors right you spoon it into your crust,

Now for a treat that will clog your arteries, When you are trimming i will cut some of the fat trimmings in strips. i mean small strips. like 2-4 inch long. rub and put those on the pit too. after a few hours they will be like crusted smoked brisket flavored bacon. I have made the mistake of eating too many and upsetting my stomach.

I like that it has a top and bottom crust. It looks very savory.

They really are. I’ll use a springform pan to get a nice thick round pie, plus it makes it easier for presentation because the crust stays intact versus trying to get it out of a pan

Make some fresh pasta....sauté shrooms over high heat in butter, sage, a little garlic, toss with pasta.

Morels are excellent in soups and as a sauce...like a demi-glace.
