For those of you from Welsh, there was a store called the "Welsh Meat Market" just off of the main street. Used to be the first stop after a duck/goose hunt for boudin, cracklin and a cold beer.
Is that place still open?

I'm from Roanoke,La about 4 miles from Welsh. Graduated from Welsh. Grew up with strokes. Trying to reach the person who replied that they were a Strohe. I really need to hear back from them. I make small batches of my own smoked sausage for personal use but just can't duplicate the best. Please email me at oldspaceeng30@gmail.com Thanks

Could someone related to the Strohe's please contact me. I'm from Roanoke and need to talk with someone that knows some things about this sausage before I die. Ive been trying to duplicate it in small batches for my personal use but just haven't mastered it. I'm 73 and intend to do it before I'm gone.

Rabideaux's is owned by Glenn Daigle and has been in business since 2008. Possibly same family recipe ?? I'm in the store/plant several times per year for business. Their fried catfish and smoked sausage is the real deal. Best part....the store is located 1 minutes/mile off I-10 exit 44. Easy ON/OFF for those traveling from HOU-LC area to LAF-BR-NO

never saw the OP post date as I'm responding to a 6 yr old thread ... oooops FWIW, Daigles Meat Market in Welsh is permanently closed.

This thread from 6 years ago, like the F&D Board greats thread and the Manuel's Hot Tamale thread, is making me nostalgic.
I would really like to have that Stohe's sausage before I die. I wish I could have gotten some for my mom before she passed at 97 last April.
(My mom did alright though, her actual last meal was fried softshell crab and oysters on the half shell.)

I asked my MIL, and she remembers it fondly. She called it the “standard for sausage and boudin.”
They would buy it from Famon Bonin’s Grocery Store in Lake Arthur (across the street from Nott’s).

I'm 45min ~ 1 hr from Welsh and will see what I can do to find the sausage and hook a brother up
