I love to fry turkeys. I do it a few times a year. Lately I coat the body (inside the skin) with Uncle Steve's and then a coating of tuscan italian spice outside the skin. I inject the entire thing with a mixture of butter/lemon juice/garlic hot sauce/crab boil, making sure to run the injector inside the skin or pierce the skin as little as possible.

This is the result:

I stopped injecting mine and the flavor has been just as good. Just don't fry it into oblivion.

I did try to cook one on ths gas grill and it was a disaster, so take my advice sparingly

I'll fry one here in about a week. Tony's infused butter under the skin, marinated with Tony's garlic flavored, and Tony's sprinkled on the outside the night before. It's all Tony's all the time.

What temp do you fry at and how long her pound? There's a fine line between so hot it blacken it, and too low that the bird absorbs the oil. I struggle with that.

When I used to fry them they would come out golden brown. I fried at 325 for 7 minutes a pound.
