Anybody else replacing rice with riced cauliflower?

Have replaced rice with Costco riced cauliflower in gumbo, red beans and etouffee in the last couple of weeks and dont mind it at all. Essentially no carbs.

Some things like jambalaya it probably isnt feasible but I’m a believer now.

"Don't mind it at all" is totally subjective and I'm not there yet.

"Tolerable" is the way I would describe it.

That's a notch up from "edible."

It's not bad as a starch substitute but tolerable is a pretty good description.

We normally just have it as a side dish with butter or pan drippings on it.

Haven’t gone that far, but I’ll make fried “rice” often.

Cauliflower mashed potatoes are bomb too. Can’t taste much of a difference.

I'll also say tolerable as rice replacement.

I also like it as a mashed potato style replacement.

However, for pasta replacement, I've come to like this stuff: 10g net carb and 24g protein for a 2oz serving (which is a decent amount of pasta), compared to 40g for 2oz of regular pasta

Been making fried rice with it. It’s pretty good. Obviously not the same but it fills the craving

Been doing keto for 2 months.

I will fight everyone here for a bowl of red beans with real rice

We've found substitutes for pasta making our own from egg and cheese, nothing for rice.

My wife and I used it in Gumbo while we were on Whole30. When it’s in something flavorful like a gumbo, you can’t really tell the difference too much.

Yes, have had it as fried rice and thought it was good. It was very similar to real rice.

Tried Spanish “rice” but did not like that much but if you have other Mexican food to eat w/ it, it is tolerable.

Have had cauliflower “mashed potatoes” in the past but we used a head and not the faux rice. That is ok, pretty good actually, depending on the cheese, etc that you mix w/ it.

The person followed Poche's recipe. The main thing is to not use water. I barely used any and it came out really good. Actually more than "tolerable" which surprised me and I look forward to making it again.

You should try it as a pizza dough replacement. Good stuff for a topping vehicle.
