Any of you coonarses have a good etouffee recipe?

Looking to expand my cooking skills beyond BBQ and want to try to make some etouffe.
I tried this weekend, but did something a bit wrong and it was light colored. Not sure if I didn't let the roux darken enough first. Also, seems there was an ingredient or two missing, because it wasn't quite right.
I was out of cayenne that I thought I had when I made it, though.

Typically etoufees are lighter (than gumbo)
I always use the John Besh etoufee recipe. You can google it

you make a blonde roux (butter & flour) for an etoufee'
ingredients include: onion, celery, bell pepper, garlic, S&P, green onions, shellfish stock, and Louisiana crawfish tails with fat (dash of cayenne if needed)
if done correctly, you don't need paprika, cayenne, or tomato paste to achieve the color below.

My momma's looked like that, she got the recipe from Arkansas relative who got it from a Texas relative who got it from a Louisiana relative I presume.
My mother being deceased, I recently emailed my aunt (my moms best friend) for the recipe and she said she didn't have it.
Would you mind posting, in detail, exactly what this recipe is, in this pic?

Get a bag of Louisiana fish fry etouffee mix and follow instructions . Even a dumb red neck can't mess that up .

Thank you, and everyone else! Mine was a bit lighter than that, so I messed something up.
I'll have to work on it some more!
