Alton Brown “Good Eats” - S13 Ep1 - Louisiana Crawfish Boil

I like Alton Brown, he gives great pointers. That said, anyone in Louisiana will probably laugh at most of his recommendments in this episode.
A few good pointers in this episode were about purging the crawfish, making his own crab boil, and buying Chinese crawfish.
When purging crawfish, just putting them in salt water does nothing but piss them off. You have to put them in fresh, aerated water for 12 hours, drain and repeat for another 12 hours.
He makes a nice crab boil and said the fresher ground spices will make the boil that much better. He did state you can double, triple, etc the recipe for spicier crawfish.
And, he says NEVER buy crawfish from China because of the lack of sanitation standards. Their ponds contain all types of toxins.

He was boiling 10 lbs. at a time also ...nobody got time for 4 individual boil batches from a sack.

That's what I was thinking. Seen plenty of peeled, frozen crawfish, but haven't ever seen live ones.
Have seen already boiled, still in the shell, steam-to-reheat chinese crawfish, though.

He was talking about frozen tails. He made a crawfish roll (lobster roll) with leftovers and just stated if you need just tails, you can buy them, just don’t buy Chinese crawfish.

Didn’t he build a tank out of an ice chest or something to purge the five or six pounds of crawfish he had?
I like Alton, even went and saw his show in NOLA, but that part was ridiculous.

Yes, he used a cooler and an aquarium air pump to purge them. Even if this sounds crazy, I like how he shows the correct way to do it and how just salt water doesn’t work.
I like him because he approaches cooking as a science, not art.

I don't put salt in the water, but I do mix a shite load of Metamucil. Purges them in an hour tops.

Yeah, his bit on avoiding chinese crawfish only really applies to going to those viet-cajun places that sell boiled crawfish year round, and I guess buying frozen tails at the store. I don't think anyone who boils crawfish at home would buy Frozen chinese crawfish to use.

He did that to explain the science of what it would take to truly purge them. Good Eats isn't really a cooking show per say. I mean, it is but he gets more into why you do some of the things you do in a kitchen which is why I love that show so much.

He did say aerating them makes a world of difference. They will be much more sweet and less gritty

There is a place outside of Iota, LA cannot remember the name of the place but they aerate the crawfish. I know someone who has built a purging tank to aerate the crawfish based on this restaurant. Real simple. When ready pull the plug empty the water and pour into a basket. Not overly to much trouble. Just need to do it a day or two in advance versus day of your Boil. Big difference in quality.
