Good rule of thumb: don't take crawfish advice from folks not from Louisiana.

Alton Brown cooks according to science, not art. He made some very good points.

BTW, there are MANY people in Louisiana who should never give crawfish advice.

Alton just used the wrong words there.

Let me help him out

NEVER buy any food from China because of the lack of sanitation standards. They shite in their fields and ponds. They sold baby formula with Melamine (a poison) added because it increased the nitrogen level in tests, making it look like they had more protein than actually contained. This slick trick Killed Babies

We'll see. new Hot Tails putting in a huge aeration purging tank... LINK "Nextdoor to the restaurant, Cody plans to renovate an existing warehouse to become Crawfish District, a crawfish wholesale distribution center that will be outfitted with a state-of-the-art purging system.

The system, designed by Cody, is nine years in the making and allows the crawfish to sit in water for 24 hours, allowing them to relax and clean themselves naturally. The result is a cleaner crawfish, as compared to crawfish sprayed by hoses, which he says tend to curl tight and hold dirt. "
