Albasha Grecian/Tzaziki Sauce Recipe

Good members of the food board I come to you for your help.
We moved out of La many years ago, and one odd dish we find ourselves craving is chicken shawarma from places like Albasha.
We have Greek places, but nothing like the Lebanese from there. In reality, it ends up being their sauce that makes it special it seems. We have tried a few tzatziki recipes, but not been able to replicate like back home.
If anyone has been able to come close to the Grecian sauce Albasha uses, we will be forever in your debt.

The salad dressing is a bit different, but I find that to be even better than their tzatziki sauce.

I was told that the salad dressings have an instant potato flake base.

You actually have a grocery in JAX called Albasha, ironically enough. Although this looks like a bigger grocery store for Mediterranean products.
I can't remember what Albasha Baton Rouge Tzaziki tasted like, but the big couple of ingredients that can swing the taste (IMO) are the lemon juice, and the yoghurt. Whether the yoghurt is goat or cow based, what the fat content is, etc., are probably the distinguishing factors.
Try one of the recipes that have gotten you the closest with yoghurt from a Mediterranean market. In Houston, we're spoiled to the point that the Arab grocery has more than 20 kinds of rice, I think six different kinds of feta (Bulgarian, French, Dutch, Greek, etc.)

Kontos tzatziki sauce tastes a lot like Albasha’s, it’s just thicker. I wouldn’t be surprised if Albasha used Kontos and thinned it down a bit.
The salad dressing taste like toum, my wife buys a quart of it every once in a while and it’s addictive.

I wish I had the problem of my family craving something from Albasha. We can cook something at home that somewhat resembles Greek/Mediterranean and it’s fine, going to a restaurant that serves something similar is a nonstarter on deciding what to eat.
