A Really Good Mignonette Sauce For Oysters

This is excellent. Right up there with the Peche recipe.

1 cup good red wine vinegar
1 medium shallot, finely minced
1/4 t fresh cracked black pepper
1/4 t good salt (I used a pink Hymalayan salt)


Mix and use 1/4 t on a raw oyster. Excellent.

Good raw oysters need nothing on them.

Agreed. But a sauce like this one is a nice twist. Really brightens the flavor.

And we've all had a sack of subpar oysters. This can save the day.

smoke your vinegar, seriously.
smoked mignonette sauce would work well on briney gulf coast oysters.
Pour the vinegar into a metal bowl (a 4" half hotel pan would work better but I doubt any of us have one laying around) and place it is the smoker under normal smoking conditions with oak. check after 4 hours. Smoke longer for stronger smoke flavor. You'll be subbing it out for every typical vinegar application.

Champagne vinegar is an awesome replacement. See this much more in Northern States
