I have several cookbooks but based on this board’s counsel, I picked up a copy of “The New Orleans Cookbook”.
Going though it this evening and can tell that it will be a great adventure diving into it and cooking some New Orleans dishes.

The gumbo(s) and jambalaya(s) recipes are pretty good.
Chicken maquechoux (pg 144) is good. Some of the fish dishes look awesome, but unfortunately I’m allergic...
