5lbs headless 6-8ct Royal Reds - what to do with them?

Picked them up at Joe Patti's. I have vacuumed sealed / froze in bags of ten each (~1 lb each).

Any good recs?

I do have 12 lbs of headless 10-15ct royal reds for normal shrimp meals (shrimp & grits, etc).

I want something super special for these 6-8ct monsters

Not to rain on your parade, but there is not too much you can do with shrimp that big. They are simply too big to absorb all the seasoning.

They are excellent grilled, or kababbed however.

You don't cook these in crab boil, etc. you do that with brown or white shrimp.

These are a delicacy, and need to be served in a dish. That's why I'm asking for any recs/recipes

I'd butter poach them, then either hit them with a broiler or a grill after seasoning.

Id grill them and baste with some garlic butter and put them on top of dirty rice.

Shrimp thar size do not work well in Sautee or casserole applications
Marinate overnight in soy sauce, ginger and lime juice

Remove shells and butterfly, then spread shrimp tails flat by running a small wooden skewer length wise on each side of the center seam. This will prevent the shrimp from curling up when placed on the grill.

Grill over the wood of your choice
Applewood is really good

Baste with marinade si vous ple they will cook fast and disappear from the serving dish even faster.
Drawn butter and lemon is also a great way to dip em!

Steam them like you would a lobster, Old Bay, drawn butter. Fine eating.
