5 gallon chicken and andouille gumbo at the camp

Perfect day for it, everyone cooks theirs differently, here is my technique, came out mighty fine

Smoked some thighs and drumsticks


Then started the roux








Added the veggies and cooked down







Added chicken stock



Chicken is done




Deboned the chicken and cut up the andouille, added that in

And this is what I need up with






Bout time to go sit on the stand for a while and will come back to friends and a hot meal
