That's where it gets tricky. It's the server's responsibility to add the gratuity to the check, they can chose not to, but some restaurants have policies and tell their servers it has to be added.
Have I ignored that? Yeah. But it honestly backfired more times that it ever helped... to the point where I gave up and just added it to all parties of 6 or more.

I can definitely see how not adding the gratuity might backfire. Some people might read "18% may be added" as "18% WILL be added" and just assume that the tip was already included in the total, and then completely stiff the server.
Just like other people double-tip because they don't realize 18% has already been added to their bills. Yes, both of these types of people are stupid for not looking at their tickets carefully, but I'm sure it happens a lot.

it used to be at our discretion whether or not we wanted to add the auto gratuity to a check ... i worked my tables hard so i had no problem rolling the dice every time and not adding it .. i only got burned once .. otherwise, i usually did much better than the 18% .. and i always gave the extra out as tip outs to the bar, kitchen, etc. .. i was just doing my job .. they were the stars ...

I would always make it a judgement based on the demographics of the table. A large group of deteriorating old ladies - you damn right I am gratting that table. A drunk group of business men - different story.

FWIW, i used to work at boutins for a while, and i get that people don't like the food, its nothing special and its overpriced, but it paid my bills
i added 18% to a table maybe one out of every five times
its not that hard to tell who's gonna tip decent, and it paid off way more often than not

I waited tables in the early 90's and this has always been the norm to charge a tip for 6 or more people.

I ordered the Crawfish Tasso Alfredo because I figured no one could screw that up. And I was right. It was actually pretty good, but of course it's a simple cheese and cream dish. There were plenty of tasso and crawfish.

You are correct about some restaurants making it mandatory and consistent. Seems a few years ago there were worries about discrimination issues if it was not done consistently. Nevertheless, the managers need to insure that the service is top notch at all tables, especially one that is getting auto-grated.
