I'd cook it how you want. Once it's rested you can slice it, then anything that's not cooked to temp like someone wants put it back in the oven or on a cast iron pan and let it cook to their temp.

I've often cooked a rib roast whole, then sliced into steaks and seared both sides. For the people that like a little more done you just sear each side for an extra minute or two. Takes less than 5 minutes to cook everything to temp you want. Very easy.

How's about you just make it all rare to medium rare and I come over and eat the delicious roast in front of the picky eaters?

Barring an invite, I'd just roast it to rare or medium rare and then finish individual portions to the degree of shoe leather your guests insist on.

It's a good piece of meat. Unless you burn it, it's going to taste good. I have no problem eating a medium or no read piece of this cut if that's what offered. I don't think it's ruined cooked that way either for this cut. I'd prefer medium rare to medium, but that doesn't always happen.

I like to please my guests. I mean I invited them, so isn't that point? You've got some good suggestions here and any of them will probably work fine. Enjoy your party!

People being picky when you buy them a 17 lb rib eye roast is a dick move. Id accomodate them once by cutting in half and doing two diff temps... But never cook for them again. If they want grey expensive meat how about they host next time?

The irony is that the ones here talking about picky people are just as picky.

I probably like it as rare as anyone here but I wouldn’t act like a douchebag if it was medium or “worse”

Picky is trashy. They prefer aristocratic.

But I concur. I’m guessing they would all just eat a 17 lb medium rare roast by themselves rather than “ruin it”
