Lodge puts on a good cornbread festival in South Pittsburgh every year. There are some really good recipes around.

I grew up on homemade cornbread, but I prefer jiffy. It drives my dad and grandpaw up the wall.

I like to joke around with people but sometimes on the internet that does not come across as gentle ribbing. I forget sometimes that a lot of people are super sensitive and get their feelings hurt very easily. My daughter is like that also and nothing wrong with it.
I really do not care if someone uses a cornbread mix or puts ketchup on their steak.
People like what they like and who is someone else to question it?
As far as chopping goes that is my daughters favorite thing to do when I cook so I let her and she is 13 not 9.

For New Year's, I used Pioneer Cornbread Mix (not the sweet) but with buttermilk instead of milk which is what I always use. I made a basket weave of bacon to cover the bottom of the cast iron skillet and put it in the oven on 400 until the bacon began to brown and the skillet got good and hot. Added the mix and baked for the normal time. It was glorious.

Well, actually it does, but no more than a TBS. If you can taste it, it was too much. Just need enough to make the corn meal taste fresh ground.
