You can also fry them. Just put them in an egg wash, some flour and breadcrumbs, then drop in hot peanut oil for 2 minutes.

Easy idea, but you could make a jalapeno simple syrup for cocktails. It should come out looking like this:

Forgot about this one. It's one of my favorites.

Jalapeno Lime Pudding

1 package lime jello pudding
3 jalapeno peppers

Follow the directions to make the pudding. Add the pudding to a blender with the 3 jalapenos and blend them together. You'll be able to impress and surprise your friends with your spicy lime pudding! It should be nice and creamy, and look like this.

Similar to something I do except no bacon wrap, not sliced in half, baked in oven.

Leave them whole with the stem top sliced off. Core/seed. Stuff with your mix or similar ground meat/cheese mix.

the wire rack in the oven? stand the peppers up by hanging in between the wires of the rack and place a cookie sheet under to catch drippings. Without the bacon they can cook at higher temp faster, remove from wire rack with tongs individually.

If your oven rack doesn't have the wires spaced capable of hanging peppers they make racks for standing baking:

Excuse my ignorance, but why would you boil all of the ingredients? It seems like it'd be better saute the jalapenos and onion, then throw in the garlic at the end. I'd think that would develop way better flavor in the end

It's to soften the peppers and garlic so the texture is creamy. You could also soften the peppers and garlic by cooking them other ways. I prefer roasting (sauteing could work too) because you get a richer flavor and better color, as can be seen in the pic for my salsa recipe on page 1.

I grew my jalapenos from seed this year and I swear they're as hot as habeneros. And I've grown reapers, ghost, morugas and Trinidad peppers. I had to neutralize the heat with other veggies.
