Will be down there Thursday to Sunday. Wife will be in a conference all day Thursday and Friday. Looking for public beach recommendations or any must do’s in the area.

Tampa's on "The Bay", so there are no beaches. The beaches around Clearwater Beach are doable and tend to get too crowded and "touristy" for me.
Not a beach person frankly. Some places within 2 hours or less that would be amazing if you like the outdoors:
Kayak Weeki Wachee Springs!

Ft. Desoto State Park
Grab a drink. Hang out at the Don Caesar!

Anna Maria would be worth the drive if you can!

So, for beaches you have Clearwate/St Pete Beach as the closest. If willing to push a bit further then Siesta Key is an option too.
In terms of attractions, the beaches are a big draw. The Florida Aquarium, Busch Gardens or the Lowry Park Zoo are fun; but, with school out they will be packed.
Tampa is well known for its craft beer scene. Cigar City Brewing, Angry Chair, 7venth Sun and more. Lots of great choices in the area. If you are into cigars they can be found in Ybor City for sure.
In terms of food Tampa has made huge strides in the past year or so. Check out Armature Works, an old abandoned warehouse used for servicing the trolleys a century ago. It now houses a dozen restaurants in an open seating food hall environment. It’s at the northernmost end of the Riverwalk which makes for an enjoyable stroll into the Amalie arena Sparksman Wharf area.

Bern’s - most iconic restaurant in Tampa. Classic steakhouse
Columbia - oldest in the City. Occupies a full city block. Traditional Spanish/Cuban cuisine
Ichicoro - Ramen
El Puerto - Argentinian grub
King of the Coop - Nashville style hot chicken
Bodega - among the best Cuban Sammie’s in the City
Wright’s Gourmet House - deli/bakery
Yummy House - Best Chinese in the City
Sa Ri One - Korean BBQ
Nico’s Arepas - Venezuelan grub

Best breweries in Tampa area are Cycle brewing (amazing stouts) and Hidden Springs brewing is blowing up. Cigar City is classic there but not the best anymore. That's all the input I have unfortunately.

We are taking the kids (6 & 2) to Tampa in a few months and I am trying to decide what area will be best for us to stay in. We are planning on doing Busch Gardens, the aquarium, possibly going up to Disney for a day, maybe the beach... we haven't made any definite plans yet. We are leaning towards an AirBnB rather than a hotel. Any recommendations of where to stay/kid friendly restaurants/things to do would be much appreciated!

Tampa has lots of great kid friendly options. Tourism is huge for this town, you won’t find many places that aren’t kid friendly.
Lowry Park Zoo, the Florida Aquarium and Busch Gardens are all good choices. There’s also the Glazer Children’s Museum. Especially for kids as young as yours. If willing to make a small trek you can do the Clearwater Aquarium which is where Winter the dolphin lives (made famous by the Dolphins Tale movies.)
There are tons of AirBnB’s and many are very inexpensive. Some can be in some sketchy areas. Look at Seminole Heights or the core of the City. Ybor is an option too; but, can be a bit gritty.
All of the restaurants I mentioned earlier are kid friendly. Bern’s is really more geared towards a romantic evening with your spouse. The Columbia has flamenco dancer shows a few nights per week. Gotta get a reservation; but, would be fun for your oldest.

Bern’s... Not necessarily because it’s the best steak. That may be found at Charlie’s or Del Frisco; but, its the rest of the Bern’s experience that makes it worth it.
You’ll certainly have a great steak. It’s decidedly old school. The chateaubriand is amazing.
Afterward you’ll get a tour of part of the wine cellar. Bern’s has the largest privately held wine collection on the planet. It’s the size of a high school gymnasium. You can literally put your hand on a bottle of Port made when Abraham Lincoln was still alive. You can order it too.
Afterward off to the Dessert Room. They’ll drop a dessert wine and spirit menu on you the size of the Yellow Pages. Want a Port from 1960? They’ve got it. Old school tableside Banana’s Foster. House roasted Cuban coffee.
