Anyone have a sweet potato casserole recipe they want to share?

You can save time by buying Bruce's potatoes in a can. I've made them with ones I've cooked and there is really no difference in the casserole.

3 large cans of Bruce's Yams, drained.



1 stick of butter melted

3 eggs beaten

3 cups of dark brown sugar

1 1/2 cups of Steen's syrup

1 tsp of vanilla

1 pinch of salt

1/2 cup of cinnamon

1 tsp of nutmeg

1 Tbsp of orange zest

1 Tbsp baking powder

mix all in a large bowl with a mixer until smooth

Pan into a large baking dish (buttered) and sprinkle with cinnamon sugar over entire dish liberally. Pecans (cracked/pieces) over entire dish and cover with either flat marshmallows or small marshmallows.

Bake at 350 for about 35 minutes covered with foil (be sure to tent to keep from touching marshmallows). Some broil top for a minute to brown marshmallows at the end. It's incredible and most eat it as a dessert.

I cook it for both sides of the family for Christmas and Thanksgiving every year.

Scalloped Sweet Potatoes with Apples and Raisins

This is so awesome, even people who say they don't like sweet potato will love it:

1 Tbs unsalted butter
3 tart apples, cut into small pieces
2 Tbs brown sugar
2 lbs sweet potatoes, also cut into small bite size pieces
1/2 cup golden raisins
1 1/2 Tbs flour
1/4 tsp cinnamon
1 cup chicken broth, fat free
1/4 cup chopped pecans

1. Preheat oven to 350 and spray a 9 by 13 cooking dish with Pam (or similar).

2. Melt the butter in a medium nonstick skillet over med. heat. Add the apples and stir, cooking for about a minute or two until the apples start to release a bit of juice.

3. Add the brown sugar, then cook for two minutes until the apples start to get soft. Place the apples, sweet potatoes and raisins in the baking dish.

4. Now, place the flour and cinnamon in a small bowl. Whisk in 1/4 cup of the broth until it all dissolves, then add in the rest of the broth and pour the whole thing over the fruit and into the dish.

5. Cover loosely with foil and bake for one hour, then remove foil and sprinkle in the pecans and bake a few more minutes until the pecans are toasted.

Check out Ruth's Chris recipe. It's kinda, sorta, not exactly what I do, but will put you in the ball park. I take spoon fulls of the 'crust' and poke it down into the potatoes. I've met people that can't stand this type of recipe. My family are fans! Have Fun!

Three cups of sugar plus a cup and a half of Steens? My teeth hurt just reading that recipe. You making fudge or what? Lol.

I normally hate sweet potatoes done any way besides savory, but I love the ones at Ruth's.

Bon Appetit has a savory one if you're not looking for the dessert-like one:

Here's a recipe a couple made at one of the Kegtoberfest's I organized. I'm not usually a fan of these types of sweet potato casseroles but this on was pretty good. The original recipe had milk and was substituted with crushed pineapple(not my idea and the pineapple version was what they brought to one of the huge dinners). It's almost a dessert really. I made it once in a pie for a dessert.

I don’t have a recipe per se but I just boil the sweet potatoes, peel them, then blend them with some heavy cream, butter, cinnamon, nutmeg, pecans, syrup, salt, brown sugar til it tastes good, then bake it with marshmallows on top at 350

Mine is based on this one from Cotton Country cookbook. I use vanilla, butter and nut extract rather than plain vanilla which everyone loves. I have to triple this recipe and I use locally grown sweet potatoes.

Sweet Potato Casserole
Simply delicious

3 cups sweet potatoes, about 4 good-sized ones
1/2 cup sugar
1/2 cup butter
2 eggs, beaten
1 teaspoon vanilla
1/3 cup milk

TOPPING:
1/3 cup melted butter
1 cup light brown sugar
1/2 cup flour
1 cup chopped pecans

Boil and mash potatoes. Mix in sugar, butter, eggs, vanilla and milk. Put in 13 x 9 inch baking dish. Topping: Melt butter and mix in remaining ingredients. Sprinkle on top of potato mixture. Bake 25 minutes at 350 degrees. Serves 10 to 12.
