Rainy afternoon Asian noodles

The weather was meh today, so I spent the afternoon indoors and decided to make some Asian noodles. I kind of combined Vietnamese, Thai, and Japanese. I live a block down from an international grocery store and can get the ingredients cheaply. Kroger and Publix charge an arm and a leg for things like oxtails, ginger, and shallots. Not so at international stores.

Broth:
Chicken legs
Oxtails
charred onion
charred ginger
lemongrass
cilantro
fish sauce
cinnamon
coriander
brown sugar
water

I combined it all in the instant pot and set it to 40 minutes. The chicken and beef were frozen or else I'd have probably done 30 minutes. I did a quick release to keep it from overcooking.

Next I strained the broth and picked out the chicken and some meat from the oxtails. I discarden all the rest.

I poured the broth in a pot and added a little coconut milk. Al also added a half packet of the flavor packet that comes in this ramen. This stuff is nuclear-level hot and not to be taken lightly. It's my favorite flavor instant ramen.





I reduced the broth down a third. While that was going on I cooked the noodles and made a soft boiled egg. Once it was all said and done, I garnished with some green onions and shallots.
