Have large smoked ham bone as well has lots of meat. I cut off the bone and have it vacuum sealed and frozen. I have done red beans in the past with ham bones. Anyone have other ideas?

Black eye peas for NYD.

Really, almost any kind of bean or pea will work. A good soup will do too.

If you don't want to do beans you could use it with collard greens

I make a good ham stock and use it for beans and bean soups. Delicious.
