I don't reverse sear, and I've found much over 2" is too thick for me to grill to my liking.

It's great for a nice standing rib roast that you portion into steaks and quickly sear on a piping hot grill.

2 inch bone in rib eye. Sometimes if im having a bunch of people over ill ask the butcher to go for 3inch

1/2 inch strip, microwave on high 3 minutes, douse in A-1 or Heinz 57. I'm too classy for ketchup.
