We're going to need more details as to what you're wanting to make. There are a lot of kinds of sausage out there.

Do a search for "Len Poli" he's got recipes for sausage from all over the world. Also, Rytek Kutas' book " Great sausage recipes and meat curing" is full of good information.
Keep us posted on what you do.

Nahh, I just remember my mom bringing some home from Reserve. It’s sausage in casing but not smoked. It had a different taste from just sausage that’s wasn’t smoked. It would make a kick arse gravy .

Ground and linked 4 lbs if Chicken and Green Apple yesterday. Will grill on pit tomorrow over apple wood. Good chit-had a patty fried for breakfast this morning.
