Improving etouffee

Shellfish has terrible texture, I was thinking etouffee could be improved by getting rid of things like crabmeat, shrimp or crawfish. Anyone know of any restaurants in BR that would sub in something like grilled chicken instead?

Why are you putting crab in ettoufee? Stick with crawfish.

Seems like something soy based like a nice tofu might be more your speed.
