We want to spend a couple of days to see volcanoes, waterfalls, hot springs etc. And then use the remainder of days for beach and relaxing. Id love to venture into some of the smaller towns and enjoy the local fare. Is it an easy place to drive around?
I’m thinking we may need to spend a couple of nights in La Fortuna and then spend the remainder of our nights near Liberia?

The La Fortuna area is fabulous. I'd spend more time there than Liberia. Look into Proyecto Asis with the kids. They will love it. There are so many nature walks/hikes, waterfalls, hanging bridges, zip lines, etc.
It's extremely easy to drive around Costa Rica. It might be the safest I've felt in any country. I could totally live there. Unless you really want to spend big bucks and stay at a big resort, I'd go more to Tamarindo or beaches near there. The town is small and a bit touristy, but safe and friendly. It's also pretty close to the Liberia airport.
If you could work in a couple of days, I'd try to visit Monteverde. I'd do hanging bridges there. The cloud forest is incredible and there are not that many in the entire world. It's very magical.
I also found Costa Rica to be relatively inexpensive. It's a fairly big country with so much to see. I'd go back!!!

AirBnB in Manuel Antonio (tons of great options from simple/very cheap to big houses with private pools; both with great views). Beaches in the park are great + tons of wildlife

Look into Rio Celeste waterfall. Not a massive waterfall, but the bright blue water is stunning.
