Seen the seasoning done before in North Louisiana, so figured it was something they did up there,but never saw mustard and hot sauce.

No, it’s not.

We stick to the traditional methods. Season the boil with mayonnaise and no alcohol consumption allowed.

Cormier's in Monroe. But Cormier is anything but from Monroe. Although his joint has been rocking along in a big way for probably 30 or so years now. Cormier pretty much has it down with a certain style that's been unchanged for quite some time, as well as any other in Louisiana I'd venture to say.

I do not know a single person that does it this way and I’ve lived in north Louisiana my entire life.
